Espresso-Ancho Rubbed Denver Steak
Ingredients
Method
- Pat steaks dry. Mix espresso powder, brown sugar, smoked paprika, ancho chili powder, garlic powder, onion powder, 1 tsp salt, and 1 tsp pepper into a rub.
- Coat steaks generously on all sides and let sit at room temperature 30-45 minutes (or refrigerate a few hours, uncovered, for deeper flavor penetration).
- Denver steak is well-marbled and tender — treat it like a premium cut: heat a cast-iron skillet until just smoking with oil.
- Sear steaks 3-4 minutes per side for medium-rare; the sugar in the rub will help form a dark, almost caramelized crust — watch that it doesn't scorch.
- Transfer to a plate, tent with foil, and rest 5-8 minutes.
- Pour off excess fat, keep the fond, and sauté shallot and garlic over medium heat 1-2 minutes.
- Deglaze with red wine, scraping up the browned bits, and simmer until reduced by half.
- Add stock, reduce to a light sauce consistency, then swirl in margarine off heat with the thyme for richness and shine.
- Slice steak against the grain and serve fanned out with the red wine pan sauce spooned over.
