Ginger-Soy Turkey Stir-Fry
Ingredients
Method
- Toss turkey with 2 tbsp soy sauce, half the ginger, half the garlic and the cornstarch; let marinate 20 minutes.
- Whisk remaining soy sauce, remaining ginger and garlic, rice vinegar, silan and 2 tbsp water in a small bowl to make the stir-fry sauce.
- Heat neutral oil in a wok or large skillet over high heat until shimmering.
- Add turkey in a single layer and sear without moving for 1-2 minutes, then stir-fry until browned and just cooked through, about 3-4 minutes; remove.
- Add bell pepper and snap peas to the pan and stir-fry 2-3 minutes until crisp-tender.
- Return turkey to the pan, pour in the sauce, and toss constantly until it thickens and coats everything, 1-2 minutes.
- Drizzle with sesame oil and toss once more.
- Finish with scallions and sesame seeds; serve immediately over rice.
Chef's tip
Keep the heat high and the pieces moving - stir-fry is a fast, hot technique, and a crowded or lukewarm pan will steam the turkey instead of searing it.
