Tzimmes-Spiced Cinnamon Braised Baby Kolechol
Ingredients
Method
- Season the meat generously with salt and pepper.
- Sear in hot olive oil in a heavy pot on all sides until well browned, about 10 minutes total; remove and set aside.
- Sauté onions in the same pot until deep golden, 10 minutes, then add garlic and cook 1 minute more.
- Stir in tomato paste, cinnamon stick and allspice; cook briefly until fragrant.
- Deglaze with red wine, scraping up the fond, and simmer 3-4 minutes to reduce slightly.
- Return the meat to the pot along with beef stock, dried apricots or prunes, silan and bay leaf.
- Cover and braise at a low simmer (or 325F oven) 3-3.5 hours, until the meat is completely tender.
- Remove the meat and rest; discard the cinnamon stick and bay leaf, then reduce the braising liquid over high heat until glossy - the fruit should have broken down into a jammy sauce.
- Portion the meat, spoon the sweet-savory fruit sauce generously over the top, and finish with parsley.
