Cedar-Plank Grilled Cod with Smoked Paprika & Garlic Oil

Ingredients

  • 4 thick-cut cod loins (about 6 oz each)
  • 1 cedar grilling plank, soaked in water 1 hour
  • 4 Tbsp olive oil, divided
  • 2 cloves garlic, thinly sliced
  • 1½ tsp smoked paprika
  • 1 lemon, in wedges
  • Kosher salt and black pepper

Method

  1. Warm 3 Tbsp oil with the garlic in a small pan over low heat until golden; stir in the smoked paprika and remove from heat.
  2. Heat a grill to medium. Pat the cod dry, brush with the remaining oil, season, and arrange on the soaked plank.
  3. Set the plank on the grill, close the lid, and cook 15–18 minutes — no flipping — until the cod flakes in big petals.
  4. Spoon the warm garlic-paprika oil over and serve with lemon.

Chef's tip

Cod’s big flakes fall apart on bare grates — the plank does the work, and the cedar smoke deepens the smoked paprika.
