- 4 Scottish salmon fillets (about 6 oz each) or one 1½ lb side
- 1 cup packed basil leaves
- ¼ cup pine nuts or walnuts
- 1 clove garlic
- ⅓ cup olive oil
- ½ cup panko breadcrumbs
- 1 cup cherry tomatoes, halved
- Kosher salt and black pepper
Pesto-Crusted Baked Scottish Salmon

Method
- Heat the oven to 400°F. Blend basil, nuts, garlic, and oil into a pesto; season.
- Place the seasoned salmon on a lined pan, spread with pesto, and top with panko. Scatter tomatoes around.
- Bake 12–14 minutes (16–18 for a whole side), until the crust is golden and the salmon is just cooked.
- Serve with the blistered tomatoes.
Chef's tip
This pesto is deliberately pareve. So works great as a Shabbos starter.
