Pesto-Crusted Baked Scottish Salmon

Serves 4 Bake

Ingredients

  • 4 Scottish salmon fillets (about 6 oz each) or one 1½ lb side
  • 1 cup packed basil leaves
  • ¼ cup pine nuts or walnuts
  • 1 clove garlic
  • ⅓ cup olive oil
  • ½ cup panko breadcrumbs
  • 1 cup cherry tomatoes, halved
  • Kosher salt and black pepper

Method

  1. Heat the oven to 400°F. Blend basil, nuts, garlic, and oil into a pesto; season.
  2. Place the seasoned salmon on a lined pan, spread with pesto, and top with panko. Scatter tomatoes around.
  3. Bake 12–14 minutes (16–18 for a whole side), until the crust is golden and the salmon is just cooked.
  4. Serve with the blistered tomatoes.

Chef's tip

This pesto is deliberately pareve. So works great as a Shabbos starter.
