Blackened Grilled Tilapia
Ingredients
Method
- Mix the spices. Pat fillets dry, coat with oil, then coat generously with the spice blend.
- Heat a grill to high with a well-oiled cast-iron skillet or griddle on the grates.
- Cook 3 minutes per side until the crust is dark and the fish flakes.
- Serve with lime wedges.
Chef's tip
The skillet-on-the-grill trick gives you a true blackened crust without the fish falling apart.
