Cedar-Plank Grilled Black Cod with Sweet Soy Glaze

Ingredients

  • 4 black cod fillets, skin on (about 6 oz each)
  • 1 cedar grilling plank, soaked in water 1 hour
  • 3 Tbsp soy sauce
  • 2 Tbsp brown sugar
  • 1 Tbsp rice vinegar
  • 1 tsp grated ginger
  • Sliced scallions, to finish

Method

  1. Simmer soy, brown sugar, vinegar, and ginger 2–3 minutes into a light glaze; cool.
  2. Heat a grill to medium. Pat the fillets dry, season lightly, and arrange skin-side down on the soaked plank.
  3. Set the plank on the grill, close the lid, and cook 12–15 minutes, brushing with glaze in the last 5 minutes, until the fish flakes.
  4. Brush once more with glaze and top with scallions.

Chef's tip

Black cod is buttery and far too delicate for bare grates — the plank means no flipping, no sticking, and a kiss of cedar smoke.
