Cedar-Plank Grilled Whitefish with Charred Lemon Vinaigrette

Ingredients

  • 4 whitefish fillets, skin on (about 6 oz each)
  • 1 cedar grilling plank, soaked in water 1 hour
  • 2 lemons, halved
  • 4 Tbsp olive oil, divided
  • 1 tsp honey
  • 1 Tbsp chopped chives
  • Kosher salt and black pepper

Method

  1. Heat a grill to medium. Grill the lemon halves cut-side down directly on the grates 3–4 minutes until deeply charred.
  2. Brush the fillets with 1 Tbsp oil, season, and arrange skin-side down on the soaked plank. Grill with the lid closed 12–15 minutes, until the fish flakes.
  3. Squeeze the charred lemons into a bowl; whisk in 3 Tbsp oil, honey, and chives.
  4. Spoon the warm vinaigrette over the fish.

Chef's tip

Whitefish loves smoke — the cedar plank echoes its smokehouse heritage, and nothing falls through the grates.
