- 4 wild salmon fillets (about 6 oz each) or one 1½ lb side
- 1 cedar grilling plank, soaked in water 1 hour
- 3 Tbsp brown sugar
- 2 tsp sweet paprika
- 1 tsp kosher salt
- ½ tsp black pepper and ¼ tsp cayenne
- 1 Tbsp olive oil and lemon wedges
Cedar-Plank Wild Salmon with Brown Sugar Rub

- Heat a grill to medium. Mix brown sugar, paprika, salt, pepper, and cayenne.
- Oil the salmon, then coat with the rub. Place skin-side down on the soaked plank.
- Set the plank on the grill, close the lid, and cook 15–18 minutes, until the fish reaches 120–125°F for a moist medium.
- Serve on the plank with lemon.
