Cedar-Plank Wild Salmon with Brown Sugar Rub

Serves 4 Grill

Ingredients

  • 4 wild salmon fillets (about 6 oz each) or one 1½ lb side
  • 1 cedar grilling plank, soaked in water 1 hour
  • 3 Tbsp brown sugar
  • 2 tsp sweet paprika
  • 1 tsp kosher salt
  • ½ tsp black pepper and ¼ tsp cayenne
  • 1 Tbsp olive oil and lemon wedges

Method

  1. Heat a grill to medium. Mix brown sugar, paprika, salt, pepper, and cayenne.
  2. Oil the salmon, then coat with the rub. Place skin-side down on the soaked plank.
  3. Set the plank on the grill, close the lid, and cook 15–18 minutes, until the fish reaches 120–125°F for a moist medium.
  4. Serve on the plank with lemon.
