Ingredients

  • 4 black cod fillets (about 6 oz each)
  • ¼ cup white miso paste
  • 3 Tbsp mirin
  • 3 Tbsp sake
  • 2 Tbsp sugar

Method

  1. Whisk miso, mirin, sake, and sugar until smooth. Coat the fillets and marinate, covered, at least 2 hours or up to 24 in the refrigerator.
  2. Heat the oven to 400°F. Wipe excess marinade off the fish and place on a lined sheet pan.
  3. Bake 10–12 minutes, then broil 1–2 minutes until the top is deeply caramelized.
  4. Serve with steamed rice and vegetables.

Chef's tip

The longer the marinade (up to a day), the deeper the flavor — this is the famous restaurant method.
