Serves 4 Grill

Ingredients

  • 4 hamachi fillets (about 6 oz each)
  • ¼ cup soy sauce
  • 2 Tbsp mirin (or 1 Tbsp honey + 1 Tbsp water)
  • 1 Tbsp honey
  • 1 Tbsp freshly grated ginger
  • 1 clove garlic, grated
  • 1 tsp toasted sesame oil
  • Sliced scallions and toasted sesame seeds, to finish

Method

  1. Whisk soy, mirin, honey, ginger, garlic, and sesame oil. Marinate the fillets 30 minutes in the refrigerator, reserving 2 Tbsp of marinade.
  2. Heat a grill to high and oil the grates. Remove fish from marinade and pat lightly.
  3. Grill 2–3 minutes per side — hamachi is best with a slightly rosy center.
  4. Simmer the reserved marinade 1 minute, brush over the fish, and finish with scallions and sesame.

Chef's tip

Hamachi is rich like salmon — don’t cook it past medium or it turns dry.
