- 2 whole branzino (1 to 1½ lb each), cleaned and scaled
- 3 Tbsp olive oil, plus more for the grill
- 1 lemon, thinly sliced, plus wedges for serving
- 4 sprigs fresh thyme and 4 sprigs rosemary
- 3 cloves garlic, thinly sliced

- Heat a grill to medium-high and oil the grates well. Pat the fish very dry and cut 3 shallow slashes on each side.
- Season inside and out with salt and pepper. Stuff the cavities with lemon slices, herbs, and garlic. Rub the skin with olive oil.
- Grill 5–6 minutes per side without moving, until the skin is crisp and releases easily and the flesh flakes at the backbone (140°F).
- Rest 3 minutes and serve with lemon wedges.
Chef's tip
If the fish sticks, it isn’t ready to flip — give it another minute and it will release on its own.
