Whole Grilled Branzino with Lemon & Herbs

Serves 4 Grill

Ingredients

  • 2 whole branzino (1 to 1½ lb each), cleaned and scaled
  • 3 Tbsp olive oil, plus more for the grill
  • 1 lemon, thinly sliced, plus wedges for serving
  • 4 sprigs fresh thyme and 4 sprigs rosemary
  • 3 cloves garlic, thinly sliced
  • Kosher salt and black pepper

Method

  1. Heat a grill to medium-high and oil the grates well. Pat the fish very dry and cut 3 shallow slashes on each side.
  2. Season inside and out with salt and pepper. Stuff the cavities with lemon slices, herbs, and garlic. Rub the skin with olive oil.
  3. Grill 5–6 minutes per side without moving, until the skin is crisp and releases easily and the flesh flakes at the backbone (140°F).
  4. Rest 3 minutes and serve with lemon wedges.

Chef's tip

If the fish sticks, it isn’t ready to flip — give it another minute and it will release on its own.
